Put cinnamon, flour and baking powder into a bowl. Blend the eggs, milk, honey and 2 teaspoon of the melted butter in a separate jug to make a smooth batter.
Pour into flour mixture use a wooden spoon and mix together.
Heat 1 tablespoon of butter in a skillet/frying pan.
Spoon the thick batter onto the hot skillet/pan, making pancakes about 3 to 4 inches in diameter, or to your own liking.
The batter will flatten out as it is cooking. Cook for about 2 mins until holes begin to appear on the top.
Turn over and cook the other side for about 1 minute or until golden. Remove to a plate and cover with a clean tea towel to keep warm.
